Inside the Kitchen

Slow dough, stone hearths

Every morning begins at the maple bench with stone-milled flour, cold water, and hands that know exactly when the dough feels right.

The 48-Hour Standard

Time builds the crust

We rest every batch forty-eight hours in our cold room. That slow fermentation creates the deep honeycomb crumb and blistering you taste on every slice.

When an order calls, the pie slides onto 650-degree quarry stone. Four minutes later, the cheese turns speckled gold and the edge crackles.

Our Kitchen Rule

Whole-milk mozzarella, wildflower honey, zero conveyor belts.

We shred cheese blocks fresh each morning, mill ripe plum tomatoes with sea salt, and drizzle hot pepper honey while crusts crackle.
